How to clean cold rooms, hygiene, and maintenance of them

Cleaning of cold rooms

To ensure proper hygiene of cold rooms, cleaning should be done with products compatible with food, such as ozone. It is an antimicrobial and disinfectant agent capable of eliminating bacteria from the surface without leaving harmful residues for health in food.

Ozone, besides cleaning, helps prolong the shelf life of food products by eliminating microorganisms responsible for the spoilage and decomposition of goods. It also prevents the appearance of mold on fruit, vegetables, and pastries.

However, it is useless to have the cold room perfectly clean if the new products that will remain inside it are not cleaned beforehand. Deep cleaning of the room should be done at least once a year, increasing its frequency as needed.

Regular cleaning in the cold room

Cleaning, like disinfection, should be done at least annually. It should be done with water at a maximum temperature of 30 °C, from top to bottom. If necessary, a soapy solution with a neutral pH based on 10% household detergent and water can be applied. If using a pressure washer, it should be done below 5 bar.

If, during the installation of the cold room panels, sealants and putties adhered to the surface, they can be removed with a damp cloth soaked in a 15% alcohol-water solution. Never directly on the surface. After applying it, wash it with plenty of clean water.

Never use alkaline or acidic cleaning agents, as well as stripping agents, MEK, diesel, acetone, ammonia, solvents, chlorinated compounds, or detergents containing abrasive particles.

Remember to perform both the cleaning and disinfection of your cold rooms at least once a year. This way, you will guarantee hygiene, product preservation, and the health of your operators.
